1. In a non-stick pot, bring 750ml of water and 2+ tablespoons of extra virgin olive oil to a boil

3. Add more water if necessary
4. Remove lid and continue cooking for 2 minutes until water is absorbed and texture is creamy
5. Season with salt, let rest 1 minute, and add 1-2 tablespoons lukewarm water to amalgamate
